People often talk about grind, pressure, or bean quality, but without the right temperature even the best coffee risks losing balance and aromas. Why is extraction temperature so important?

Coffee extraction is a chemical process: hot water dissolves the aromatic compounds, oils, and acids in the ground beans. An extraction temperature that’s too low or too high alters this balance. As we’ll see shortly, every type of brewing method has an ideal temperature range. In this article I’ll give you general guidance, but as I always say, what matters most is experimenting to understand how temperature changes the taste in your cup.

If, for example, we happen to brew outside the range, we shouldn’t necessarily pour the coffee down the drain because it doesn’t meet the parameters. On the contrary, my advice is to taste it anyway, because only that way can we realize how extraction temperature actually works.

In general terms, however, we can say that if the temperature is too low we’ll get a coffee with a flat, unaromatic taste. This is because at low temperatures the aromatic compounds of the bean can’t be adequately dissolved. Conversely, a temperature that’s too high will tend to burn the coffee, generating bitterness and overly harsh aromas.

The ideal extraction temperature for espresso

For espresso, the general rule is to keep the water between 85°C and 96°C. The choice of the ideal extraction temperature will be determined primarily by the type of roast we’re using. If we’ve chosen a very light roast, then we can stay in the higher part of the range, around 95-96°C. On the other hand, if the roast is already dark in itself, we should refer to the lower part of the range, around 90°C, precisely to avoid burning the coffee.

There are espresso machines on the market that allow precise regulation of the brew group temperature. This system is called PID. Usually higher-end machines are equipped with it. It’s one of the best systems for controlling extraction temperature.

  • Moka: here the temperature isn’t easy to control, but a useful trick is to start with already-warm water in the boiler. This reduces the contact time with direct heat and limits the risk of burning the coffee.
  • Filter (V60, Chemex, AeroPress, etc.): the recommended range is between 92°C and 96°C. A lower temperature enhances acidity and freshness, a higher one gives body and intensity. For more enthusiastic brewers, there are temperature-controlled kettles, indispensable for filter coffee. As an alternative, you can adopt a simple rule: let boiled water cool for about 30-40 seconds before pouring, thus reaching 94-95°C.
