Coffee cake: the perfect recipe for an aromatic and irresistible dessert
Coffee cake is a true classic for anyone who loves the intense, enveloping aroma of coffee. It is ideal for breakfast, a sweet afternoon snack, or as a dessert after dinner. In this guide you will discover a simple, soft, well-balanced recipe designed to highlight the flavor of coffee without ever becoming bitter.

Ingredients (22-24 cm cake pan)
- 3 eggs at room temperature
- 180 g sugar
- 80 ml short espresso (cold)
- 100 ml milk
- 100 ml seed oil
- 250 g all-purpose flour (type 00)
- 1 packet of baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
Method – Coffee Cake
1. Prepare the coffee cake base
In a bowl, beat the eggs with the sugar until you get a light, fluffy mixture. This step is essential to achieve a soft, airy coffee cake.
2. Add the wet ingredients
Fold in the seed oil, vanilla, cold espresso, and milk, stirring gently so the mixture does not deflate.
3. Combine the dry ingredients
Sift the flour, baking powder, and salt together. Add them a little at a time to avoid lumps and keep the batter smooth. Sifting may feel tedious, but trust me, it makes a real difference in the final result.
4. Bake the cake
Pour the batter into a buttered and floured pan. Bake in a conventional oven at 175 °C (350 °F) for 35-40 minutes.
Do the toothpick test: it should come out dry.
5. Let it cool and serve
Allow your coffee cake to cool completely before slicing. You can serve it plain, dusted with powdered sugar, or topped with chocolate or coffee decorations to suit your taste.
Tips for a perfect coffee cake
- Use a short espresso for a richer flavor.
- Choose a robusta blend or dark-roast arabica if you want a bolder taste.
- For an extra-soft cake, avoid opening the oven during the first 20 minutes.
