Pork tenderloin: Ingredients (serves 4)
- 600 g of pork tenderloin
- 2 apples(Golden or Renette)
- 1 cup of espresso ristretto
- 1 tablespoon of honey
- 1 tablespoon of sweet mustard
- 2 tablespoons of extra virgin olive oil
- 30 g of butter
- 1 tablespoon of brown sugar
- Salt and freshly ground black pepper, as needed
- A sprig of fresh rosemary
Method
- Marinating the tenderloin
- In a bowl, mix the espresso, honey, mustard, and a pinch of salt and pepper.
- Massage the tenderloin with this marinade, cover with plastic wrap, and let it rest in the fridge for at least 1 hour (better 2).
- Cooking the meat
- Heat the oil in a non-stick pan.
- Sear the tenderloin on all sides over high heat to create a crust.
- Transfer it to an oven preheated to 180°C for 15-18 minutes (depending on thickness). The meat should remain slightly pink in the center. You can use a probe thermometer to measure the internal temperature. For ideal cooking, the ideal temperature is 72°C.
- Preparing the apples
- Peel the apples and cut them into wedges.
- In a pan, melt the butter with the brown sugar.
- Add the apples and caramelize them for 5-6 minutes, until soft but not falling apart.
- Coffee sauce
- Deglaze the meat pan with a splash of hot water or broth and another half espresso.
- Let it reduce until you get a thick, glossy sauce.
- Plating
- Cut the tenderloin into thick medallions.
- Arrange the slices on the plate, accompany them with the caramelized apples, and drizzle with the coffee sauce.
- Garnish with a sprig of fresh rosemary.
