Coffee Terroir: How Soil and Climate Influence Taste

Just as it happens with wine, coffee too bears the imprint of the identity of its place of origin. The term coffee terroir refers to the set of natural factors — soil, climate, altitude, and microenvironment — that determine the aromatic profile of the beans. Understanding terroir means discovering why an Ethiopian coffee can have floral and fruity notes, while a Brazilian coffee tends to express hints of chocolate and dried fruit.

Soil: the foundation of taste

The type of terroir in which the coffee plant grows affects its development. A volcanic soil (Ethiopia, Guatemala, Costa Rica), being very rich in minerals, will yield a more complex and aromatic coffee. On clay soil, earthy notes will be more evident and the coffee will take on a fuller body. On sandy soils, lighter beans with lively acidity are produced.

Climate: sun, rain, and temperature

Climate is decisive for the ripening of the coffee cherry. By climate we mean both the geographic growing area and the temperature swing and average humidity level of the territory. For example, equatorial zones with abundant rainfall favor slow ripening and intense aromas. The day-night temperature swing instead increases the sweetness and complexity of the bean. Hot, constant climates produce sweeter, rounder coffees with less acidity. We’ll see some concrete examples below.

Altitude: the perfect balance

Altitude is one of the most important indicators of terroir. It is often shown on the labels of the most prestigious coffees precisely because it has a decisive influence on the final result. Generally speaking, the coffees with greater aromatic complexity are those grown at higher altitudes.

  • Low altitude (<800 m)→ coffees with full body but low acidity.
  • Medium altitude (800-1,200 m)→ balance between sweetness, body, and acidity.
  • High altitude (>1,200 m)→ complex coffees, with well-defined floral and fruity notes.

Microclimate and biodiversity

The concept of terroir also takes into account the microclimate and biodiversity of the growing area. For example, shade-grown plantations favor slow ripening and delicate aromas. Rainforests or rich ecosystems obviously lead to greater aromatic complexity.

Examples of famous terroirs

  • Ethiopia (Yirgacheffe): characterized by floral notes (jasmine, rose), citrus, and spicy notes, with a body that can range from light to full depending on the processing and the region of origin
  • Brazil (Minas Gerais): known for its sweet and balanced flavor profile, with notes of cocoa, dried fruit, caramel, and a velvety body. The high altitudes, the natural growing process, and the high percentage of Arabica give these coffees low acidity and a delicate aroma, making them appreciated for their smoothness and quality
  • Colombia (Huila): known for its red fruit notes, sweetness, lively acidity, and medium velvety body, with possible hints of cherry, strawberry, apple, and caramel. The ideal environmental conditions, including high altitude, volcanic soil, and consistent rainfall, favor the production of high-quality beans, which are often processed using the washed method and hand-picked
  • Jamaica (Blue Mountain): a prestigious and rare variety of Arabica Typica, renowned for its exceptionally sweet, rich, and velvety flavor, free of bitterness. Aromatic notes include jasmine, milk chocolate, yellow fruit, and hazelnut, with a smooth acidity and a round body.
