When we enjoy a good coffee, we rarely picture the long and fascinating journey the beans went through to reach our cup. From plant to roasted bean, every phase is crucial in shaping the aroma, body and final quality of the drink. In this installment of the “Inside the bean” column, we explore step by step the coffee’s journey, from cultivation all the way to roasting.

From plant to bean — Cultivation: where coffee is born

It all begins in the planet’s tropical bands, between the Tropic of Cancer and the Tropic of Capricorn, where the warm and humid climate and altitude offer ideal conditions for the coffee plant to grow. The most common varieties are Arabica and Robusta, each with different botanical and aromatic characteristics. The plant produces small red fruits, called drupes or coffee cherries, which contain two seeds inside: the green coffee beans.

That’s right — in nature coffee is green; it isn’t dark like we’re used to seeing it! The dark color is due to the roasting process, which is essentially the “cooking” of green coffee.

Harvest: manual or mechanical

Harvesting can happen in two ways:

  • Picking: picking means the manual harvest of only the ripest, ready cherries. This method is obviously slower and therefore more expensive, since there’s no mechanized process involved. The advantage is being able to select the highest-quality fruits and therefore obtain a final product with better organoleptic characteristics
  • Stripping: stripping means non-selective harvesting of the fruits. The branch is completely cleared of its fruits, ripe or not. This method is much faster than the previous one but, as you can imagine, the quality of the final product will be lower. In some cases, however, a post-harvest selection is done to separate out the better drupes. When that’s done, you get a high-quality end product, but also a waste portion that will either not be used or be destined for productions that don’t require particular quality standards

Processing: from plant to bean

Once harvested, the cherries have to be processed quickly to avoid unwanted fermentation. There are three main methods:

  • Washed: Among all post-harvest processing methods, the washed method is considered one of the most refined and technical. The process begins a few hours after harvest, when the ripe cherries are placed in a mechanical depulper, which removes the outer skin and part of the pulp. The bean, still surrounded by a sugary layer called mucilage, is ready for fermentation, which will last for a period that ranges between 12 and 72 hours, depending on altitude, temperature and variety. Fermentation can be done dry or in water. This phase is very important because it influences the aromatic profile of the final product. Afterwards the beans are washed in running water and placed on mechanical dryers until they reach 10-12% moisture.

  • Natural (dry): this is one of the oldest and most traditional methods for processing coffee, used especially in regions where water is scarce, such as Ethiopia or some areas of Brazil. After harvest the whole cherries (not depulped) are spread out on raised beds or patios, where they are left to dry for about a month until they reach 10-12% moisture. They are then mechanically hulled and cleaned to obtain the classic green bean, which at this point is ready to be exported.

  • Honey (semi-washed): this is a middle ground between the washed and dry methods. The difference is that the sugary mucilage inside the cherry isn’t washed off right away but instead remains stuck to the bean during the drying phase. This causes the mucilage to undergo a kind of caramelization that then gives the bean greater sweetness and body. This is one of the reasons this method is very appreciated in the specialty coffee world.

Drying: the time for patience

As mentioned earlier, the goal of drying is to reduce the bean’s moisture to a level between 10 and 12% to prevent the development of mold or unwanted fermentation. This phase can be done by exposing the beans to the sun (sun drying) or it can be mechanical, using forced hot-air dryers. A combination of both approaches is also possible depending on the farm’s needs.

Sun drying is more natural, but obviously requires much more labor and more time. The other method is faster but harder to manage and certainly carries a much higher energy cost.

5. Hulling and sorting

Regardless of which washing and drying method was used, residues will always remain around the bean and need to be removed to finally obtain the bare green bean. This process is called hulling. This phase is also mechanized and involves the use of hullers, which can be of various types, all with the single goal of separating the processing residues from the bean.

After hulling comes the last, very important phase before bagging and therefore export: the sorting of the beans. Its purpose is to remove beans that show significant defects and to divide them by size, weight or color depending on the case. Very often this stage is manual, but on larger farms it can also be done by dedicated machinery.

Each step of the coffee bean journey can be certified, but specialty coffee often goes beyond labels through direct trade.

A direct-trade coffee bean journey means the roaster buys from the farmer directly, paying above market price for documented quality. This shortens the coffee bean journey to two or three intermediaries instead of six or more in commodity coffee.
