When I started taking my first steps in the world of coffee I was obviously unaware of the existence of channeling. I only began to understand it when I decided to buy a bottomless portafilter, the kind that in YouTube videos they call “bottomless portafilter” (an example here).
Channeling is insidious because it’s invisible to the naked eye, but if we learn to recognize it, it can become an ally that helps us understand where and what we’re doing wrong. But what exactly is channeling, how does it form, and above all, how can it be avoided?

Espresso channeling is one of the most frustrating mistakes in extraction: water finds a preferential path and the coffee comes out under-extracted. Espresso channeling has 5 main causes, and preventing it is essential for an authentic and perfect result.
Espresso channeling — What is channeling?
Channeling is a phenomenon that occurs during espresso extraction, when pressurized water doesn’t pass through the coffee uniformly, but instead creates actual preferential “channels.” At these points, the flow is faster and uncontrolled, carrying with it some under-extracted coffee (acidic, lacking body) or in some cases over-extracted (bitter and astringent).
Remember, espresso machines use high pressure to extract coffee. That pressurized water will tend to take the path of least resistance through the coffee bed. Espresso delivery, given the high pressure, amplifies any inconsistencies in the preparation.

How does it form?
When espresso channeling occurs, it’s because there are inconsistencies in the coffee grounds or in the coffee bed that ease water flow through one part of the puck rather than another. Water won’t distribute evenly across the bed and will instead flow through these “channels” (hence the term “channeling”), over-extracting the coffee in those channels and under-extracting the coffee outside of them.
The main causes of channeling are tied to uneven distribution of coffee in the portafilter and to non-uniform compaction. Some of the most common triggers are:
- Incorrect leveling of the grounds
- Crooked or too weak tamping: the most common mistake in puck preparation is improper tamping. A good tamp ensures that the coffee grounds are compacted to create a flat, uniform coffee puck that lets water diffuse across the entire surface.
- Presence of clumps or holes in the coffee bed: clumping, that is, agglomeration, is another common cause of espresso channeling. Finely ground coffee often clumps when it comes out of the grinder, creating air pockets in the coffee puck after it has been tamped.
- Non-uniform burrs
- Humidity or stale coffee
The type of filter used, the grind size, and the condition of the machine can also have an effect.
How do you recognize it?
The best way to diagnose a channeling problem is to have a bottomless portafilter. Unfortunately, there aren’t many other alternative methods. The bottomless portafilter lets us see in real time all the stages of the extraction. If everything has been done well, we should see the coffee coming out uniformly from all the small holes of the basket and after a few seconds it should form a single stream at the center of the basket. The color of the coffee should also be uniform with slight darker streaks.

How do you avoid it?
To prevent channeling you need to pay attention to every stage of preparation. Here are some fundamental best practices:
- Uniform distribution: use tools like the WDT tool(Weiss Distribution Technique) to break up clumps and distribute the coffee in the basket.
- Precise leveling: make sure the coffee surface is perfectly level before tamping it.
- Consistent and straight tamping: apply uniform and controlled pressure. There are tampers on the market that rest on the edge of the basket, staying perfectly parallel to the basket itself, and are calibrated to give the right pressure to the coffee. I’m using this one and so far I’m getting on really well with it.
- Grind control: use a fresh, fine, and uniform grind, calibrated for your type of machine.
- Cleaning and maintenance: a clogged shower screen or worn gaskets can encourage channeling.
Why is it important to avoid it?
Channeling can ruin even the best specialty coffee. A cup affected by channeling will show sensory defects such as sharp acidity, weak body, lack of sweetness, or unpleasant aftertaste. Avoiding it means respecting the raw material and honoring all the work behind every bean: from the plantation to your cup.

Espresso Channeling: Pro Techniques to Prevent It
To definitively prevent espresso channeling, use these pro techniques: WDT Tool (Weiss Distribution Technique) to evenly level the dose, perfectly perpendicular tamping with constant pressure (15-20 kg), precision baskets (IMS, VST). Espresso channeling is often also caused by an uneven grind: investing in a quality grinder with conical or flat burrs drastically reduces the risk.
