Ricotta crostini with coffee are a refined and perfect appetizer, ready in 5 minutes. These ricotta crostini combine the creaminess of fresh cheese with the aromatic character of instant coffee, for a surprising and authentic result.

Ingredients(serves 4)

  • 8 slices of rustic bread (such as baguette or country bread)
  • 200 g of fresh ricotta
  • 1 level teaspoon of instant coffee
  • 1 teaspoon of wildflower honey(or acacia)
  • Salt and black pepper to taste
  • Extra virgin olive oil to taste
  • (optional) Chopped walnuts or chopped pistachios to garnish
  • (optional) Fresh aromatic herbs: thyme or a light touch of rosemary

Procedure

  1. Toast the bread: heat a non-stick pan or the oven. Lightly brush the bread slices with extra virgin olive oil and toast them until crispy and golden.
  2. Prepare the ricotta cream:
    • In a bowl, mix the ricotta with the instant coffee (you can dissolve it in a teaspoon of hot water if you want a more even flavor).
    • Add the honey, a pinch of salt, and a dusting of black pepper.
    • Work the mixture until you get a smooth and fragrant cream.
  3. Assemble the ricotta crostini:
    • Spread the coffee ricotta cream on the toasted bread slices.
    • Finish with a light garnish of your choice: a few drops of honey, a dusting of chopped walnuts or pistachios, or a few small fresh thyme leaves.

Tips

  • If you want a more “dessert” effect, slightly increase the honey and serve with a grating of dark chocolate on top.
  • You can also use a very strong ristretto espresso instead of instant coffee for a more intense aroma.
