  • 40 g of grated Parmigiano Reggiano
  • 1 small shallot
  • 80 g of walnut kernels
  • 2 tablespoons of wildflower or acacia honey
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of freshly ground coffee powder
  • Salt to taste
  • Black pepper to taste

Which coffee should you use?

For this preparation it is advisable to use a 100% Arabica coffee with a medium roast. The notes of chocolate, nuts and caramel pair particularly well with the taleggio and the walnuts. A very dark, bitter blend would fight the cheese instead of supporting it, while a bright washed coffee with pronounced citrus acidity would clash with the honey.

Method

1. Prepare the risotto base
