Coffee risotto ingredients (serves 2)

  • 160 g of Carnaroli or Arborio rice
  • 12 fresh red prawns (or king prawns)
  • 1 untreated mandarin with edible peel(juice and zest)
  • 1 espresso cup of ristretto coffee
  • ½ golden onion
  • 30 ml of dry white wine
  • About 500 ml of light vegetable broth
  • 30 g of cold butter
  • 1 tablespoon of extra virgin olive oil
  • Salt and pepper to taste
  • Optional: chopped pistachios or grated zest for decoration

Procedure

  1. Cleaning the prawns
    Shell the prawns, removing heads and carapaces (you can use them for a quick broth). Score them along the back to remove the black vein. Set them aside.
  2. Prepare the broth
    If you want to intensify the flavor, make a quick broth with the carapaces, water, celery, and onion. Otherwise use a light vegetable broth already made.
  3. Sauté and toast
    In a saucepan, sweat the finely chopped onion with the oil. Add the rice and toast it for 2 minutes, until it becomes translucent.
  4. Deglaze and cook
    Deglaze with the white wine. Once evaporated, start adding the broth little by little, stirring. Continue cooking for about 15 minutes.
  5. Flavoring
    Halfway through cooking, add the juice of half a mandarin and one espresso cup of ristretto coffee. Stir well to blend the aromas.
  6. Cooking the prawns
    In a non-stick pan, heat a drizzle of oil and sear the prawns for about 1 minute per side, salting them lightly. They should remain tender.
  7. Mantecatura (creaming)
    Once cooking is finished, turn off the heat and cream the risotto with the cold butter. Adjust salt and pepper.
  8. Plating
    Serve the risotto hot, arrange the prawns on top, and garnish with grated mandarin zest and, if desired, a sprinkle of chopped pistachios.
