Classic tiramisu ingredients (serves 6):

  • 500 g fresh mascarpone
  • 4 medium eggs (very fresh, preferably organic)
  • 100 g granulated sugar
  • 300 g savoiardi (ladyfingers)
  • 300 ml quality espresso coffee, cooled
  • Unsweetened cocoa powder, to taste
  • A pinch of salt

Nero Caliente tip on the coffee:

For a truly special tiramisu, choose a single origin Arabica with notes of dark chocolate and dried fruit (Ethiopia or Colombia, for instance), brewed with an espresso machine or even with a well-cleaned and well-dosed Moka. What matters is that the coffee is carefully brewed and not too bitter, so it doesn’t overpower the other ingredients.

Preparation:

1. Brew the coffee

Brew about 300 ml of espresso or Moka coffee. Let it cool down completely, without sweetening it.

2. Separate the eggs

Separate the yolks from the whites. Whip the yolks with the sugar until you get a light, fluffy cream.

3. Add the mascarpone

Add the mascarpone to the whipped yolks, one spoonful at a time, until you obtain a smooth and velvety cream.

4. Whip the egg whites

Whip the egg whites to stiff peaks with a pinch of salt. Gently fold them into the mascarpone cream with bottom-up movements.

5. Dip the ladyfingers

Quickly dip the ladyfingers in the cooled coffee, one at a time. Be careful not to soak them too much, they should stay firm.

6. Assemble the tiramisu

In a baking dish (or in individual cups), alternate a layer of dipped ladyfingers with a layer of cream. Continue until you run out of ingredients, finishing with the cream.

7. Rest and cocoa

Cover and let it rest in the fridge for at least 4 hours (overnight is even better). Before serving, dust generously with sifted unsweetened cocoa.

Extra Nero Caliente tip:

For an even more engaging experience, serve the tiramisu with a small espresso made from the same coffee used in the recipe. It will be a perfect sensory pairing.

Classic Tiramisu Recipe: Make-Ahead and Storage Tips

The classic tiramisu recipe improves overnight — prepare it the day before serving so flavors meld. Refrigerate the classic tiramisu recipe covered with plastic wrap and dust with cocoa just before serving. The classic tiramisu recipe keeps 3 days in the fridge; do not freeze (mascarpone separates on thawing). For a single-portion version, layer the classic tiramisu recipe in glass tumblers and serve chilled.

Classic Tiramisu Recipe: Step-by-Step Method

Begin the classic tiramisu recipe by brewing a strong, cold espresso. Use a quality specialty single-origin or a 100 percent Arabica blend; the espresso is the soul of the classic tiramisu recipe and cheap coffee will dull the final result.

Separate egg yolks from whites. Beat yolks with sugar until pale and thick — 4-5 minutes with an electric mixer. Fold in mascarpone gently to keep volume. The classic tiramisu recipe texture depends on this step: overmixing makes the cream runny.

Beat the egg whites to soft peaks, then fold them into the yolk-mascarpone mixture in three additions. The classic tiramisu recipe cream should hold its shape on a spoon but still flow softly.

Dip the ladyfingers in cooled espresso for one second per side — no longer, or they will collapse. The classic tiramisu recipe ladyfinger soak is the most common point of failure: brief contact gives structure, long soak gives mush.

Layer in a glass or ceramic dish: ladyfingers, mascarpone cream, ladyfingers, mascarpone cream. Cover and refrigerate at least 4 hours, ideally overnight. The classic tiramisu recipe flavor develops with rest — never serve immediately.
