The honey process in coffee: a balance between sweetness and cleanliness

In recent years, coffee processing methods have taken on an increasingly important role in the perception of quality. We’re no longer just talking about variety and terroir, but also about how the beans are handled after harvest. Among the most fascinating processes is the honey process, a technique that manages to balance sweetness and aromatic cleanliness, giving us complex and surprising cups.

What is the honey process in coffee

The honey process is a post-harvest processing method that sits halfway between the washed and the natural. After harvest, the cherries are depulped to be dried. In the washed method, all of the pulp (actually called “mucilage”) is removed, while in the natural method the cherry is left intact to dry. In the honey process, the outer skin is removed but a portion of the mucilage (the sugary substance surrounding the seed) remains attached to the bean during drying (see photo above). It’s precisely this mucilage that, fermenting and drying in the sun, gives the coffee sweeter and fruitier notes than the washed, but with greater cleanliness and definition than the natural.

The different types of honey process

The name “honey” has nothing to do with actual honey, but with the sticky consistency the beans take on during drying. By regulating the amount of mucilage, you can give the coffee a different aroma. Obviously the most aromatic coffees are those left to dry with a greater amount of mucilage. There are various versions of the process, depending on how much mucilage is left:

  • Yellow honey→ with little mucilage, tends to produce cleaner and lighter cups.
  • Red honey→ an intermediate level, with pronounced sweetness and medium body.
  • Black honey→ with lots of mucilage, gives full-bodied, complex, and intensely sweet coffees.

Looking at the photo above, we can say that White Honey closely resembles a washed coffee, while a Black Honey tends to come close to the results of the natural method. A spontaneous question might arise: “But why remove the pulp if it’s precisely what gives the coffee more aroma?”. The question is more than legitimate. In reality, every method — from washed to natural and including honey process — has its pros and cons. We’ll talk in more detail about the other methods later on. Characteristics of the honey process

This processing method was born in Costa Rica after a strong earthquake had left the country with a severe water shortage. By removing the outer layer, drying was faster and required less water. Then, by refining this process, it was discovered that the result in the cup was very pleasant. Generally, coffees that have undergone the honey process show these characteristics:

  • Natural, soft sweetness.
  • Medium-high body.
  • Balanced and well-defined acidity.
  • Aromatic cleanliness superior to that of naturals.

For this reason it’s one of the methods favored by many coffee lovers and is often chosen for specialty coffees destined for high-level filter and espresso brewing.

The honey process represents a perfect balance between two worlds: on one side the fruity, sugary complexity of naturals, and on the other the cleanliness and brightness of washed coffees.
